Dinner Tonight: Takoyaki

For the uninitiated, takoyaki are basically octopus fritters. You make a pancake batter, laced with dashi, pour it into a special pan, add in cooked octopus, pickled ginger and chives. You top the spheres with a Japanese barbecue sauce, kewpie doll mayo, seaweed and bonito flakes.
They’re crispy, but pillowy inside. The additions give it this sweet, but funky (in the best way) flavor. The mayo rounds the whole thing out. It’s the perfect dish for someone who professes a hatred of mayo (these people are not to be trusted, generally), since the thing blends into this fantastic, muddled bite that hits all the right notes.
These didn’t puff up as much as I’m accustomed to. I think maybe my baking powder has gone. But, since the whole thing looks like a (delicious) hot mess under the best of circumstances, here’s the evidence.
Whenever I’ve had them out, I’ve always thought “I could eat twenty of these!”
Turns out I can.
